Curried away...
It is getting cold here in Minnesota again. Every year once November hits I realize how cold and how long the winters are here, and how short our summers are. I prefer cooler fall weather to the summers heat. But you know I would take the heat over any below zero day. I HATE WINTER!!! and its coming...
So since the weather has started to get colder the meals I make have started to get warmer. My husband and I are in L O V E with curry. I swear I make vegetarian curry about 5-6 days out of the week. I usually go more elaborate, but since I have been so busy with the shop as of late, I have come up with an awesome quick - rachel ray sort of 15 min recipe that will knock your socks off!
I give you my SECRET recipe... Shhh
FROSTING CURRY
This will feed 3-4 small servings or 2 Hungry Adults:)
1/2 bag QUORN brand Chik'n Tenders*
2 cups Trader joes frozen organic broccoli florets
3/4 cup Trader joes tomato basil marinara - yes pasta sauce...and its AWESOME!
3 tbsp Patak's Biryani Paste (brand pictured)
1 tbsp Patak's Vindaloo Paste (pictured)- this stuff is really hot you might want to add this to taste.
4 Canned whole tomatoes Cut up
1/4 cup water as needed
Add marinara, and Paste first to pan. Stir, then add rest of ingredients cover pan and simmer for 9-10 min. Stir occasionally.
Take lid off and turn heat up slightly, stir to evaporate some of the liquid. This will take a minute or two.
Cook as long as it takes to get it to the consistency you like your curry. We like ours a little sloppy so we can soak it up with Garlic Naan Bread! YUMMY!
You can serve this with rice or just naan bread. It's nice and low in calories!
*This is also great with chicken or beef if you are not vegetarian. (My husband loves it both ways he's a "Meat-atarian" LOL) You just need to adjust cooking time so that your chicken or beef is cooked through before adding to curry sauce.
